Mexican Cornbread Skillet Casserole



Cheese.  If you put cheese on a rock, my family will eat it.

Lucky for them, this meal isn't cheese on a rock... it's fabulous all the way through!
ha!  Cheese on a rock.

This is an ooey gooey cornbread that really has more of a cornbread stuffing consistency.  It's very moist, and so easy to make.

To make this dish you'll need:

1lb browned ground beef (or turkey)
1 pkg taco seasoning
1 small can green chilis
2 cans of cream style corn
2 pkgs cornbread mix
2 eggs
 3 cups shredded colby and cheddar cheese

1. Preheat oven to 375.  Season the browned ground beef with the taco seasoning in a skillet, but omit the water that the recipe on the seasoning calls for.  Turn burner to low heat.
2.  Add the chilis, cream style corn and eggs.  Stir and heat until mixture is at a warm temperature.
3.  Add the cornbread mix and the cheese.
4. Incorporate all ingredients by stirring, then bake until bubbly and golden brown (approx. 20 to 30 mins.)
